Ingredients (for 2 people):
– 1 chopped onion
– 300 grams of peeled peas
– 2 cloves of crushed garlic
– Spicy paprika
– Black pepper
– 2 eggs
– A handful of parsley
Here’s a quick guide to prepare it:
- Put the Tajín on the fire with a dash of olive oil. Once it is hot, add the chopped onion, the garlic, some parsley and the spices mentioned above. Stir in onion and cook for 10 minutes until soft.
- When the onion is tender, add a glass of water and when it starts to boil, add the peas and more parsley. Let it cook over medium heat. Add a little more water if necessary to prevent the mixture drying out.
- When the peas are done, we break the two eggs on top and cover the Tajín with its lid and leave it on the fire until the eggs are curdled.
